Busha Browne's Tropical Salsa

Makes about 1-1 1/2 cups

1 large ripe, firm banana, peeled and diced

1-2 Tbsp fresh lime juice

2 tsp fresh ginger root, diced or grated

1/2 red bell pepper, seeded and diced

2 Tbsp fresh cilantro or mint, chopped

1 scallion, trimmed and finely chopped

2 Tbsp Busha Browne's Original Banana Chutney

In a small bowl, coat diced banana with lime juice. Add all remaining ingredients. Toss lightly to mix. Taste and adjust seasonings
